This week we will be celebrating Independence Day with fireworks, lakeside picnics, backyard cookouts, sparklers, and lots of red, white, and blue. I love my country and thank God every day that I was born in the land of the free and the home of the brave. That truly is worth celebrating! Speaking of celebrating…I know that times a flyin’ and the 4th is tomorrow, but I wanted to share these Patriotic Ice Cream Sandwich Shortcakes with y’all. This is a delicious and refreshing summer dessert. It’s super easy to put together and great for a late summer evening gathering.
The hardest part about preparing Patriotic Ice Cream Sandwich Shortcakes is cleaning the berries and hulling the tops from the strawberries. Can you even call that hard? After the berries have dried – you simply top your favorite ice cream sandwiches with some yummy blueberries and strawberries, and a dollop of whipped cream. That’s it… simple, easy and patriotic! To serve – prepared berries can be placed in a bowl set in ice. When you’re ready for dessert just bring out the ice cream sandwiches and let everyone dig in and help themselves. Be sure to add Bicentennial Berries and Star-Spangled Sugar Sips to your 4th of July party menu.
