It’s been a busy last few days…the month of October is flying by so fast. I’m spending time this week getting ready for our camping trip. Yep, Pete and I are heading to the mountains this weekend. It’s been a while since we’ve camped and we’re really excited to be going. It will be the first time in 29 years (since our honeymoon) that we’ve camped as a twosome. We’ve always had friends and, or family with us over the many years of camping we’ve done. So, it’ll be different, but we’re sure looking forward to it.
Before we go, I wanted to get this coffee bar recipe posted. These are quick and easy to make, and great to have around to enjoy with your morning coffee, or as a late night snack with a glass of milk.
To get started you’ll need 2 3/4 cup brown sugar, 1 cup vegetable oil, 1 teaspoon soda, 1 teaspoon salt, 1 teaspoon vanilla, 1 cup warm coffee, 2 eggs (beaten), and 3 cups flour.
Mix all of the ingredients, except the chocolate chips.
Pour onto a greased cookie sheet and sprinkle with chocolate chips.
Bake at 350 degrees or until done. Finish this coffee bar recipe off by drizzling with a powdered sugar glaze, or sprinkling powdered sugar on top while still warm.
This coffee bar recipe yielded the perfect snack to take along on our camping trip. We enjoyed, these by the glowing campfire, on a crisp fall night. Enjoy!

Amount of chocolate chips?

Thanks for asking this. I didn’t realize I had left the chocolate chips out of the recipe. I usually start with 1/2 cup and sometimes add a few extra. It really depends on how chocolatey you want it to taste. I know my gang doesn’t mind me being a little heavy handed with the chocolate chips. :) Thanks so much for bringing this to my attention.
May i know the ingredients of 1 CUP WARM COFFEE ? I will use instant coffe.

Rica, you can just follow the instant coffee directions and that will work fine. I have made it using instant coffee and it turned out just fine. Thanks for stopping by!
What size pan? Sorry, I’m one of those folks who can’t wing it. These bars sound scrumptious.

Thanks for answering my question so quickly. I made a pan of these this morning and they are incredible! (Very hard to resist when they are still warm.) I fix supper for my kids and their families during the week and your bars are tonight’s dessert. I can’t wait until they swing by after work to pick up the food and taste these bars. My 12 yr.old daughter asked me to bake her Coffee Bars [girls in her class were eating] (I had NO CLUE what they were) soo she asked Goggle & a few recipes popped up & she said Ma! Please make these.
I’m gonna doubled it, (cuz it looks sooo EZ & yumm) have you ever used any flavor chips or only Chocolate? (Just wondering)

I have only used chocolate chips, but I’m sure you could get creative with other flavors. I usually use light brown sugar. I don’t necessarily pack it tight, but I do make sure the measuring cup is full without any air pockets. It doesn’t matter which coffee you use. I can’t have caffeine, so I always use decaf. I hope this helps, and I hope your daughter loves the bars. I was thinking about making some of these the other day. They are super yummy! Thanks for stopping by!

Thank you, I made 1 batch…. & B4 they where completely cooled… they where gone!! That’s how good they were.
Sooo when my kids weren’t looking I quadrupled the recipe.
Also Esther asked Y I didn’t mix the chips in… & I told her.. so she said the “next time” I should mix them in & add more on top!. (So I did) (I like it the way it was, but my kids like it with more. (They found out I made more, couldn’t hide DELICIOUS Yummy smell.
Guess what… in a week & a 1/2… those where Gone too!
