These ingredient equivalents are useful when a recipe calls for an ingredient in an amount that makes it difficult to know how much you will actually need to purchase. Â If you have a recipe that calls for 3 cups of cooked, diced chicken – how many pounds of chicken will you need? Â The chart below will help you eliminate that guesswork.

Cooking & Baking Substitutions:
- 1 tsp allspice = 1/2 tsp. cinnamon, 1/4 tsp. nutmeg and 1/4 tsp. ground clove
- 1 tsp apple pie spice = 1/2 tsp cinnamon, 1/4 tsp nutmeg and 1/8 tsp cardamon
- 1 tsp baking powder = 1/2 tsp cream of tarter plus 1/4 tsp baking soda
- 1 cup bread crumbs = 3/4 cup cracker crumbs
- 1 cup brown sugar = 1 Tbsp light molasses plus enough sugar to fill a 1 cup dry measuring cup
- 1 cup (2 sticks) salted butter = 1 cup (2 sticks) unsalted butter plus 1/4 tsp salt
- 1 cup buttermilk =Â 1 Tbsp white vinegar or lemon juice plus enough room temp whole or 2% milk to make one cup, let stand for 5 minutes or 1 cup milk plus 3/4 tsp cream of tartar or 1 cup plain yogurt
- 1 cup cake and pastry flour = 1 cup minus 1 tbsp all-purpose flour
- 1 oz bittersweet or semi-sweet chocolate = 1/2 oz unsweetened chocolate plus 1 Tbsp granulated sugar
- 1 oz unsweetened chocolate = 3 Tbsp cocoa plus 1 Tbsp butter
- 1 cup corn syrup = 1 cup sugar plus 1/4 cup liquid
- 1/2 tsp cream of tartar = 1/2 tsp white vinegar or lemon juice
- 1 whole egg = 2 egg yolks plus one Tbsp water
- 1 clove garlic = 1 tsp garlic salt or 1/8 tsp garlic powder or 1/4 tsp dried minced garlic
- 1 cup half & half (for cooking or baking) = 1 1/2 Tbsp butter plus enough milk to equal 1 cup
- 1 cup heavy cream (for cooking of baking) = 3/4 cup of milk plus 1/3 cup of butter
- 1 Tbsp fresh herbs = 1 tsp dried herbs
- 1 cup honey = 1 1/4 cups sugar plus 1/4 cup liquid
- 1 tsp italian seasoning =Â 1/2 tsp dried basil, 1/4 tsp dried oregano and 1/4 tsp dried thyme
- 1 cup ketchup = 1/2 cup tomato sauce plus 1/2 cup sugar plus 2 Tbsp vinegar
- 1 cup milk = 1/2 cup evaporated milk plus 1/2 cup water
- 1 cup molasses =Â 1 cup honey or 1 cup dark corn syrup or 3/4 cup light or dark brown sugar dissolved in 1/4 cup liquid
- 1 lb fresh mushrooms = 4-6 oz canned mushrooms, drained
- 1 Tbsp prepared mustard = 1/2 tsp dry mustard powder plus 2 tsp white vinegar
- 1 tsp poultry seasoning = 1/4 tsp ground thyme and 3/4 tsp ground sage
- 1 tsp pumpkin pie spice = 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, 1/8 tsp ground allspice, and 1/8 tsp nutmeg
- 1 cup self-rising flour = 1 cup all- purpose flour plus 1 1/2 tsp baking powder and 1/2 tsp salt
- 1 cup sour cream = 1 Tbsp lemon juice plus evaporated milk to make 1 cup, or 1 cup plain yogurt
- 1 cup tomato juice (for cooking) = 1/2 cup tomato sauce plus 1/2 cup water
- 1 cup tomato sauce (for cooking) = 1/2 cup tomato paste plus 1/2 cup water
- 1 cup yogurt = 1 cup buttermilk or 1 Tbsp lemon juice and enough milk to make one cup or 1 cup sour cream
