Pumpkin Chip Muffins

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 16 oz. can pumpkin
  • 1 1/2 cups oil
  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 2 cups mini chocolate chips

Instructions

  1. Preheat oven to 375 degrees:
  2. In a large mixing bowl, beat the eggs, sugar, pumpkin, and oil until smooth.
  3. Combine the flour, baking soda, baking powder, and the pumpkin pie spice
  4. Slowly add the dry ingredients to the pumpkin mixture and mix well.
  5. Fold in the chocolate chips and fill greased or paper-lined muffin tins 3/4 full.
  6. Bake at 375 degrees for 14 - 16 minutes or until muffins test done with a toothpick.
