White Chocolate Cranberry Cookies

Ingredients

  • 1/3 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup dried cranberries
  • 1/2 cup white baking chips

Instructions

Preheat oven to 350°

  1. Beat the butter and sugars, in a large bowl, for about 2 minutes. Add the egg and vanilla.
  2. Combine the flour, salt, and baking soda and gradually add to the wet ingredients. Stir in the cranberries and white chocolate chips.
  3. Drop by heaping tablespoonfuls onto prepared cookie sheets, 2 inches apart, and bake for 9 - 12 minutes or until lightly browned. Cool for about 3 minutes before transferring to a wire rack.
